Leche Flan Pans

So I thought I’d do a post on the pans I use for my Leche Flan. In the Philippines, they call it a llanera, a small, thin, aluminum-like pan. I always assumed they used these because of their heat-conducting abilities, but I’m honestly not sure. All I know is it’s what my mother always used and the sugar stuck to the sides and bottom really well. Here is the small round pan I used for making Leche Flan in my Instant Pot:

And this is the pan I use for my full-sized Leche Flan that is made in a water bath (bain-marie) in the oven:

I think the round pan is about 4.5 inches round, maybe 5 and the bigger one is about 8×5. Both are aluminum, I think. You need the special material for the sugar to stick and for the flan to cook evenly at the same time.
