Does your area get violets? I don’t know where I got it, but I have a jar of Confit of Violet Flowers in my cupboard. I never thought about it, but I was cleaning out the cupboard and found a jar. I looked closer at it and it expired in 2015 (it was 2023 when I found it). I decided it couldn’t hurt to try it. So I popped the seal and opened it. It was a light golden color with a light lavender color. It smelled delicate and violety, too. I looked it up to see how to use it. To flavor tea, or vanilla ice cream. Hmmm. By the time I opened it, it was liquified, but not sure that’s how it was when I got it years ago. I’m a big tea drinker, so I probably got it along the way, somehow, somewhere, sometime.

As I did some research, I saw a post for violet jelly that looked interesting, as well as other ‘flower’ confits. Rose, Lavender, Jasmine, etc. I happen to be drinking Chai tea with rose petals at the moment, so I won’t mix, but I’m going to explore this more. In the meantime, here is a post on Violet Jelly that has me contemplating a spring project. https://www.bakersbrigade.com/recipe/violet-jelly/
